Quasars are the most luminous stable sources in the Universe. They are currently
observed out to redshift z ~ 7 when the Universe was less than one tenth of its
present age. Since their discovery 50 years ago astronomers have dreamed of using

We have developed a reliable powerful method to measure the atmospheric column of
water vapour (PWV) down to very low levels.
For this purpose we use and off-the-shelf cheap spectrometer to measure the
equivalent width of the H2O bands at 940nm.

In this talk we will perform a review of the basic principles of the optical/near-infrared interferometry and of the current European facilities to use this observational technique. Particularly, we will describe the interferometric observables used at near-infrared wavelengths.

Outflows generated by protostars heavily affect the kinematics
and chemistry of the hosting molecular cloud due to strong shocks. These
shocks heat and compress the ambient dense gas switching on a complex
chemistry that leads to an enhancement of the abundance of several
